Cauliflower and Potato Stir fry / Mezhukkupuratti



Every one would have their own style of making Cauliflower other than the usual North Indian Gopi Dishes , this is South Indian style Aloo Gobi.

Goes good with Rice and Chapathi



Ingredients

Potato- 1 large Cubed
Cauliflower  - Florets from half  of 1 large head
Onion - 1 medium chopped
Dry Red chili Powder / Red Pepper Powder / Paprika - 1 tsp (Adjust with your preference)
Dry Red chilies - 2 no's crushed
Turmeric Powder - 1/2 tsp
Garlic - 2 no's crushed (Optional)
Oil - 2 to 3 Tb sp
Curry leaves - 1 spring (I didn't use)
Salt to taste.

Method

* Heat 2 Tbsp oil in a pan (Preferably a non stick pan) , add chopped onion and potato pieces , add salt ,stir and cook'em in medium to low heat till potatoes are almost done ( time depends on the type of potatoes and its size , make it in to small cubes to cook faster, may sprinkle water in between while stirring it occasionally as it tends to stick to the bottom)

* When potatoes are almost done , add florets and cover to cook'em again till everything is well cooked , make space/well in the middle and pour the rest of the oil , add crushed garlic (if using)  to the heated oil (in the well) let it cook for few minutes , then add crushed red chili's and powder's (Red pepper powder and Turmeric Powder)

* A final mix to combine everything well and switch off the heat.
